Dinner in 10 Minutes?

I know sometimes Monday night dinners throw me for a loop... we like to relax during the weekend and when Monday rolls around, sometimes I have a hard time getting back in the weekly routine, especially during the dinner hour.

Couscous has saved me plenty of times, I'm talking instant-couscous.  For those of you who have not heard of it, it's a coarsely ground semolina pasta, similar in size to a grain of sugar... and it's delicious, especially the ones that come in a packaged mix.  I'm all about fresh over here and skipping the boxed "stuff", but when I'm short on time I'll take the box, as long as I can read those ingredient names.

Our recent couscous favorite has been 'Near East Couscous, Parmesan Mix', cooked and topped on fresh vegetables...

To make the couscous, I follow the directions on the back of the box... very simple and very quick (less than 10 minutes).  Couscous looks like this when you open the box...

And looks like this after about 10 minutes... so fluffy!

While the couscous is cooking, I chop up the vegetables, put them on everyone's plate and then when the couscous is finished, I top the veggies with the fluffy stuff...

Yum!  I think I'll be gettin' out the box of couscous tonight!!!

  1. is couscous a high protein? i don't know much about it, but have considered it many times. also Quinoa! looks yummy btw!

  2. The parmesan mix we used has 8g of protein/serving. I love couscous and since it kinda resembles a tiny, tiny pasta my kids love it too!

  3. Its like you read my mind! You seem to know so much about this, like you wrote the book in it or something. I think that you could do with some pics to drive the message home a bit, but other than that, this is great blog. A great read. Liga Inggris
